Bhindi (Okra)
Method
- Cook the onions together with the cumin in the oil for about 6-8 minutes
- Add the ginger/garlic paste and green chillies to the saucepan and cook for a further 3-4 minutes
- Add turmeric, red chilli powder, mango powder and salt and then after a minute add the tomatoes and cook for about 2 minutes
- Add the okra to the saucepan, put lid on saucepan and steam cook the okra (stirring occasionally)
- Cook okra for about 15 minutes before adding the coriander and garam masala
- Cook for a final 2 minutes
