Bhindi (Okra)

Method

  1. Cook the onions together with the cumin in the oil for about 6-8 minutes
  2. Add the ginger/garlic paste and green chillies to the saucepan and cook for a further 3-4 minutes
  3. Add turmeric, red chilli powder, mango powder and salt and then after a minute add the tomatoes and cook for about 2 minutes
  4. Add the okra to the saucepan, put lid on saucepan and steam cook the okra (stirring occasionally)
  5. Cook okra for about 15 minutes before adding the coriander and garam masala
  6. Cook for a final 2 minutes
