Suji Ka Halwa (Semolina Pudding)
Method
- Melt the butter in a saucepan and then add the semolina. In a separate saucepan, boil the water together with a sugar
- Cook the semolina and butter mixture until it is golden brown and the butter starts to release a caramelised sort of smell (this should take about 8-12 minutes)
- By this time the sugar and water mixture should also have boiled. Add the water and sugar syrup to the semolina (this will sizzle, be cautious), when the water has been added keep mixing and the pudding should develop a thick texture
- Cook for a further few seconds before taking off the heat and serve hot
